SOMMELIER'S DESCRIPTION:

Pineau is a nectar between cognac and wine. Its final note is fresh, fruity, with aromas of white flowers, honey, and vanilla, as well as flavors of mandarins and dried apricots. This Pineau is soft on the palate, with a delicacy matching its quality.

Chilled, it works great as an aperitif. Pineau des Charentes can be paired with cheeses like Comté, dry goat cheese, or aged mimolette. It will perfectly complement Foie gras, scallops, and most desserts such as apple tart, cakes, and cheesecake.

In the 17th century, the heir of Beaulon, Monseigneur de Nesmond, the Bishop of Bayeux, and an advisor to King Louis XIV, made the castle available to the bishops of Bordeaux. They would have a decisive influence on its vineyards. To the northwest of the castle, a round dovecote dates back to the year 1740. In those times, it was a privilege of the nobility to own a dovecote. Inherited since 1712, the Beaulon castle has belonged to Christian THOMAS.
